Cut from the shin, the osso buco (bone with a hole) is the famous cross cut shin beef leaving the bone in and the marrow exposed. It can be cooked myriad ways but comes into it's own in the traditional dish of the Lombardia region of Italy, Osso buco alla Milanese. The slices are browned then simmered in a white wine and tomatoes slurry rich with vegetables before serving on a bed of polenta. Often garnished with gremolata it is the decadent scoop of marrow in the bone which seals the deal for me. Yum
